Pumpkin pudding:
- Grate the pumpkin. Pour 3 tablespoon ghee in a heavy pan and add 10 gram of cashew nuts. Fry them.
- Put the pumpkin in a pan and fry it well, sprinkle some water, cover and boil it.
- Once the pumpkin is cooked, add the sugar and stir well. Add roasted cashew nuts. Keep stirring well.
Pumpkin juice:
- Remove the skin from the pumpkin, cut it into small pieces and grind it in a mixer, mix it with water and filter it.
- Mix two teaspoons of honey in it and drink it.
Pumpkin Rice:
- Grate the pumpkin and grind it in a mixer and extract the juice. Add some water.
- Drain the rice and boil it in three parts pumpkin water to one part. After boiling, remove and let the rice cool.
- Pour oil in a pan and add mustard, urad dal, chickpeas, grated coconut and green chilies and saute well. Pour them into the boiled rice and stir well, adding salt as needed.

- Grate the pumpkin in a bowl and add curd and salt.

Pumpkin Dosa:
- Take 1 cup of raw rice and wash thoroughly. Soak in water for 1hr. Take 1 medium sized onion and chop it.
- Add the chopped onion , 1 teaspoon of cumin seeds, 1 tablespoon of fresh grated coconut, 1cup of grated pumpkin to the mixer grinder. Grind them to a coarse mixture.
- Add the soaked rice to the mixture and grind them to a fine paste.
- Add the cumin seeds, salt, 2 tablespoon of rice flour and mix well.
- Add 1/4 cup of water and mix well.
- Transfer to the griddle and spread on the griddle like dosa. After one side cooked flip to another side. Transfer to plate.
